They tasted like candy, but they were waaaay too soft to have been good for baking--nice just for eating, if you don't mind the lack of crunch. Never heard of Diwas or Maigolds, though. Sounds like the crossed variety worked out just fine!<br /><br />The layer cake was super fun to make. I don't know how I got myself into such elaborate baking projects, but they only seem to get more complex. Funny you should ask about the apples, because it was a funny experience buying them. I went to the farmers market in search of apples and I spoke to the guy at the stand and asked him first if he spoke english and second for good baking apples. he really had no idea what I was talking about and pointed to Diwa apples. Since I still don't know any German I kind of nodded and said yes, why not. (pretty typical shopping experience for me actually). So I used these Diwa apples, apparently a cross between an Elstar and a Maigold (neither of which I've heard of - have you?) They are sweet and a bit tart and crisp.
