And surprising-- it reminded me of that classic pork and applesauce my mom used to serve my family growing up, but tarter and tangier and x100 more delicious. And! I know you've always said nice things about Kim Boyce's whole wheat chocolate chip cookies, and I made those the other night too! I still have some of them already pre-shaped sitting in the fridge, so I can bake off a couple at a time. Well I have once or twice, but it obviously wasn't that memorable. But!! Peaches are my favorite fruit and I really only love them when they're not terribly juicy and still a little tart. Apricots must be for me! That'll be my new food goal then: to fall in love with apricots. Haha, and I laughed when I read your motivation for buying them -- "Everyone else was doing it." Sounds like me! I'm not that big of a pork chop fan, but then again I've never had them with apricots. Whenever the time comes where I buy pork chops, this is going to be the recipe I try. It truly does sound delicious, especially with that sprinkling of pine nuts. <br /><br />And I have to comment on the language-- I agree completely about the names of things. Why couldn't I have grown up in school calling Spain Espana and Rome Roma?
